I used cod. Came out perfect and delicious. I think I am going to modify it for Latin flavored and add smokey black beans as a side. It will be kind of huevos rancheros.

Shockingly good for something so simple. Served for brunch but would have been just as happy with it as dinner. I was out of capers so I mixed anchovies in with the parsley and scallions instead, and it was so good I'd probably do it that way again.

Really good. Agree that this works well for dinner, too. With "medium" in mind, added eggs at 3 minutes, but then the flounder fillets weren't finished at 8 minutes more, so the eggs ended up being overdone after I let the fish cook a couple minutes more. Maybe I'll try the oven 25 degrees hotter next time.

I made this for dinner and it was good, but it needed a little something more. I might add some crispy ginger and garlic to the topping next time. I served it with a side of spinach, but might try it over brown rice. It's definitely a good base with lots of potential, just needs some experimentation.

Fluke is also known as 'summer flounder' so - yes you can use fluke. Also - sole is known as 'winter flounder' - another option. :)

I used tilapia instead of flounder because it less than half the cost. Came out great! The whole family loved it.

Shockingly good! Although going into it with low expectations couldn’t have hurt, it was still. . . shockingly good! I took the liberty of adding a cubed zucchini and two chopped tomatoes toThe pan at the beginning, almost doubling the green onion and then topping with almost double the chopped capers and parsley - and using an ovenproof skillet with the same melted butter in the bottom - but otherwise did exactly as Ms. Clark explained. And it was wonderful! Thank you for a surprise hit!

Delicious, simple dinner. Cooking time for me was much shorter. In a 400 degree oven with a metal pan, I added eggs after 4 mins and cooked only for another 3 mins. Both fish and eggs were done perfectly (eggs still runny inside).

Really easy and quick. I'm definitely going to make it again. The flavors are simple and wonderful - definitely don't skip the caper/scallion topping. I served it with homemade bread and roast broccoli but I can see this being delicious with tons of different sides, or even straight as it is.

This is awesome, didn’t use parsley and light on the capers. Super quick and delicious, love these recipes. To speed it up next time I would wrap the on in aluminum foil, the eggs are a pain to get out of the corner of the pan.

Made this for dinner tonight and it was excellent. My partner really enjoyed it and I’ll definitely be making it again. We had it with mashed potatoes which was good but good crusty bread would also work. The only possible criticism is that the times for adding the eggs may be a bit too early since some of the eggs were firm instead of runny but that may have been my dark non-stick baking pan. And the leftover parsley garnish will be going into egg salad tomorrow.

Just terrific. Used half the butter -- fewer calories and tasted just wonderful. Had no scallions so sliced yellow onion very thinly and put the flounder on top of them. Also added the capers during the last five min of cooking. The eggs around the edges melded with the fish... like a sauce... so yummy!

This is an easy recipe that is surprisingly good. Made it for dinner. Cooking times were just right.

Made it with petrale sole. Just the right thickness. Make 1/2 of recipe. Use (just ordered) quarter-sheet pans- 9x 13 inches, they have the right thickness- prewarm the pan in the oven before adding butter. Try 2 TBLs butter plus 1 TBL olive oil (heated to melt butter) to coat bottom of pan. Enough? Use two eggs, for 1/2 of recipe. Make 1/2 amt of relish in the recipe- should be enough. Serve on riced cauliflower to soak up sauce and eggs. Timing is about right (2-8 min) to set the eggs.

Yes, I used pyrex; worked fine.

Used a 3/4 pound catfish filet instead of flounder, dulce smoked paprika, a shallot instead of scallion, and it was still terrific. Added to my "tried and true" file.
