Seed the Cucumber and Squeeze out the Water
Slice the Cucumber and remove the Seeds and the Soft Center. This will help remove excess water in the Cucumber.
Rough chop the Cucumber and sprinkle with a little Kosher Salt. The Salt helps draw out the water.
Since we removed the Center, no need to let the Cucumber rest. Just put the chopped Cucumber in a Paper Towel and Squeeze out the water.
Dump the Yogurt Cheese into the Bowl of your Food Processor. Add the squeezed Cucumber, Dill Weed, Fresh Garlic, Salt and Pepper.
Add as many Fresh Mint Leaves as you like. Start with just one Clove of Garlic. You can always add more if you like a really strong Garlic taste.
I like to use True Lemon Crystallized Sprinkles, rather than Lemon Juice, to keep this Greek Tzatziki Sauce Recipe nice and thick.
Process until smooth and then give it a taste test. Adjust the seasonings and give it another whirl. Place in a covered container in the refrigerator.
