It’s fall and you know what that means, it’s slow cooker and soup season.Not only do I love a good soup but in this busy season of life between activities and carpool, I love that I can prep dinner in the morning and then have a home cooked meal ready to go when everyone is hungry. This easy slow cooker chicken tortilla soup recipe is constantly on my meal plan (grab your weekly meal planner here).

I love to make it early on in the week because it makes enough for leftovers so we can enjoy soup all week for a a quick lunch or dinner. Did I mention it’s healthy too?

A friend brought a variation of this soup over after I had my first daughter. I have tweaked it and of course simplified it over the years but it’s now one of my go to meals to take to people because it’s full of flavor, healthy but not too spicy (unless you want it to be) and makes a huge slow cooker pot full so we have enough for our family plus some to share. It would be perfect to take to a party, tailgate or small group potluck. Who doesn’t love a bowl of soup?

It’s so easy, like dump and forget it easy!It takes about 5 minutes to prepare and has only 6 simple ingredients, it’s so SIMPLE!

Slow Cooker Chicken Tortilla Soup Ingredients –

4 raw boneless skinless chicken breasts

2 (15 oz) cans black beans (do not drain)

2 (15 oz) cans stewed diced tomatoes

1 cup salsa (choose the heat you desire)

1 (4 oz) can chopped green chiles

1 (15 oz) can tomato sauce

Slow Cooker Chicken Tortilla Soup Directions –

Place chicken breasts in the base of the slow cooker. If you have leftover rotisserie chicken or shredded chicken, you can add the cooked chicken at this time as well and reduce the cook time by half. After placing the chicken of your choice in the crockpot, dump all of the other ingredients into slow cooker (this slow cooker is similiar to mine). Remember, do not drain the can of black beans, tomatoes or chiles.

Green chiles have been hard to find lately so if you can’t find them. You can substitute 2 cans of mild fire-roasted tomatoes (rotel tomatoes) with green chiles in lieu of the 2 cans of diced tomatoes and 1 can of green chiles. After combining all of the ingredients, Stir to mix and cook on low for 8 hours. If you want to reduce the cooking time, you can cook on high for 4 hours as well.

Just before serving, take out cooked chicken and shred chicken with a fork.Place the shredded chicken back into the slow cooker and stir.If the soup is too thick, you can add hot water or low-sodium chicken broth one cup at a time to thin the soup out to the consistency you desire.

If you want a creamy version of this slow cooker tortilla soup recipe you can add 8 ounces of heavy cream and 4 ounces of cream cheese to the soup at the end of the cooking process and allow to meld for 10-15 minutes, then stir, before serving.

Serve & Enjoy

Once cooked, serve the soup with all of your favorite toppings. We like to lay out all the toppings on a big cutting board so everyone can make this healthy chicken tortilla soup how they like it best. We usually add shredded cheddar cheese, fresh cilantro, crispy tortilla strips or tortilla chips, sour cream, guacamole, a splash of lime juice, finely chopped red onions, chopped pickled jalapeños and hot sauce to the top of the soup. The options are endless but it has a great tex-mex flavor and is such an easy recipe.

Sometimes, I will place some Monterey jack cheese on flour tortillas and make a few quesadillas to have along with this healthy soup. I cut the quesadillas into triangles and my kids love to dip them into the soup.

This fall, I have deemed Wednesdays to be our slow cooker recipe night. Our oldest son gets home a little later so I can leave the slow cooker on and he can still have a nice hot meal when he gets home.

As I mentioned, if you aren’t sharing this soup with another family, you will have some leftovers. Oh I love leftovers for a quick lunch or dinner. This crockpot chicken tortilla soup recipe is a great meal to heat up for lunch too. Store the leftovers in individual servings in an airtight container (I love these).
